Celebrate Valentine’s Day with PJ Taste: A Special Recipe

A Decadent Valentine’s Recipe: Raspberry & Dark Chocolate Mousse

Impress your loved one with this simple yet elegant dessert that combines rich dark chocolate with the tartness of fresh raspberries, beautifully complemented by our own PJ Taste honey and edible flowers for a stunning finish.

Ingredients:

  • 150g dark chocolate (70% cocoa or higher)

  • 3 large eggs, separated

  • 2 tbsp PJ Taste honey

  • 1/2 tsp vanilla extract

  • 100ml double cream

  • 100g fresh raspberries, plus extra for garnish

  • A selection of PJ Taste edible flowers (such as violas or nasturtiums)

  • Extra PJ Taste honey for drizzling

Method:

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and allow to cool slightly.

  2. In a separate bowl, whisk the egg yolks with PJ Taste honey and vanilla extract until pale and fluffy. Slowly mix in the melted chocolate.

  3. In another bowl, whip the double cream until soft peaks form, then gently fold into the chocolate mixture.

  4. In a clean bowl, whisk the egg whites until stiff peaks form, then carefully fold into the chocolate mixture.

  5. Gently stir in the raspberries, ensuring they stay whole for bursts of tartness.

  6. Spoon the mousse into serving glasses and refrigerate for at least two hours.

  7. Before serving, drizzle with a touch of extra PJ Taste honey and garnish with fresh edible flowers and additional raspberries for a beautiful, natural presentation.
